The Meaning of Champagn in the Modern World

Champagne is a celebration, it’s a toast, and it’s the way to bring in the New Year with good cheer. This form of sparkling wine is the beverage of choice for our most joyous occasions, and our most formal ceremonies. So, how did this bubbly brew get to have such a place of honor and dignity in human society?

Part of the reason for champagne’s upscale reputation is that the nature of the liquid itself is festive. Store under high pressure, the bottle opens up slowly, with someone teasing the cork from the head of the bottle slowly. Even as they do anticipation rises in the room as everyone waits with bated breath for that one, loud, POP, that burst of sound that signals that the party is ready to begin. This is often followed by a spray of foam as it escapes eagerly from the body of the bottle

Then, when you put the champagne to your lips, it’s like the liquid is actually dancing on your tongue. A thousand tiny explosions of flavor pop in your mouth, until it almost feels alive inside of you; alive and ready to party.

There is another reason that Champagne is associated so heavily with celebrations. Its relatively expensive. The only liquid that can actually be legally labeled as “champagne” has to be made in the Champagne region of France. All other forms of champagne are technically sparkling wine. Because of the limited amount of the beverage which can be produced in this one region, it is priced higher. The higher price makes it a “special occasion” beverage.

This perception of being “special” and “celebratory” is one which champagne makers do their best to preserve. That is why the law exists determining who can and cannot name their product using that specific label. It is also why millions of dollars are spent each year to hold contests to see who makes the absolute best champagne in the world.

Champagne is a festive beverage that naturally excites all five of the senses. This combined with a perception as being special, have combined to make this one of our most beloved celebratory drinks.

UFC 103: Belfort Blasts Franklin In Main Event

Vitor Belfort made his first appearance in the UFCs iconic octagon in five years, headlining the main event of UFC 103 in Dallas, Texas. Just over three minutes later, he had already become a top contender in the middleweight and light heavyweight divisions. Belfort dominated veteran Rich Franklin en route to a devastating knockout victory, and following the bout talk quickly shifted to The Phenom as a potential future opponent for both Anderson Silva and Lyoto Machida.

The fight against Franklin was contested at a catchweight of’5 pounds, and Belfort took several tries to finally make weight on Friday afternoon. If he had been weakened by a difficult weight cut, he sure didnt show it as he entered the cage on Saturday looking noticeably larger than his opponent. The pace of the bout was tactical and deliberate until the very end”Belfort landed a few leg kicks, but for the most part it was several minutes of the fighters circling each other. Belfort was clearly measuring Franklin for a big power shot, and he found it after a brief flurry in which neither man gained an advantage. Out of nowhere, Belfort floored Franklin with a nasty uppercut and quickly mounted a ground and pound assault on his fallen adversary. It only took three or four big shots to Franklins head before the referee jumped in to call a halt to the proceedings.

At the post fight press conference, Dana White quickly endorsed the prospect of a matchup between Belfort and UFC middleweight champion Anderson Silva”either for the title or at a’5 catchweight. Silva has only three fights remaining on his UFC contract, after which hes insisted that hell retire. Obviously nothing has been signed, but White clearly wants to get his moneys worth out of the fights remaining on Silvas deal and from that standpoint alone a matchup against Belfort makes perfect sense.

A changing of the guard was in evidence in the co-main event, as Junior Dos Santos defeated former PRIDE Open Weight GP champion Mirko Cro Cop by verbal submission. Cro Cop appeared to be moving much better on his surgically repaired knee than in recent fights, though he still demonstrated an overreliance on his counterpunching. Still, through the early part of the fight he was doing well with his straight left hand counter. In the third round Dos Santos began to use his Muay Thai knee strikes to good effect. It was a knee strike to Cro Cops head followed by an uppercut that ended the fight”Cro Cop suddenly indicated to the referee that he couldnt see and was unable to continue. Ironically, he may have suffered a broken eye socket similar to the one he famously inflicted on Bob Sapp in a 2003 K-1 bout.

Earlier in the card, Paul Daley made the most of his role as a late substitute for injured Mike Swick as he stopped Martin Kampmann by second round TKO. Kampmanns defense was nonexistent, and his decision to stand and trade with a noted power striker was highly suspect. The end came after a brutal left hook knocked Kampmann to the canvas, after which Daley followed up with some ground and pound until the stoppage.

Stan Mikita: Pro Hockey’s Unsung Hero

Professional hockey players from the former Soviet Union and Czechoslovakia are now ubiquitous, but Stan Mikita was something of a pioneer. The Chicago Blackhawks legend was sometimes relegated to secondary status behind more telegenetic stars like teammate Bobby Hull, but you can make a very good case that Mikita was the best NHL forward of the’60′s. He was born in Sokolce, in what is now known as Slovakia. In the conflict torn years prior to WW II, he was sent to Canada and adopted by an aunt and uncle. Like most young Canadian boys, he started playing hockey and quickly exhibited significant talent at the country’s national sport.

He was a star in the juniors as a teenager, playing with the St. Catherine Teepees of the Ontario Hockey Association. By’60, he was a full time player for the NHL Chicago Blackhawks and would lead the team in playoff scoring during their Stanley Cup winning year of’61.

During the early and mid’60′s, Mikita centered the Scooter Line with Ken Wharram on the right wing and Ab McDonald or Doug Mohns on the left wing, and earned a reputation as one of the most complete offensive players in the game. Bobby Hull may have been a bigger superstar among mainstream fans, but most hockey experts realized that Mikita was the team’s true offensive catalyst.

Mikitas influence wasnt limited to offensive output”he was a feared defensive player and considered one of the best faceoff men in the game. He also brought about one of the most significant innovations in NHL history, being the first to play with a curved stick blade. This was a very radical modification at the time, but was quickly copied throughout the league to the point where today a player that *doesnt* play with a curved stick is considered something of an anachronism.

Early in his career, Mikita played a tough, rugged style of hockey that made him one of the most penalized players in the game. In the mid’60s, however, he began to play a much cleaner and more sportsmanlike style that would earn him the Lady Byng Trophy for most gentlemanly player twice. According to legend, his young daughter prompted the change of play with her frequent questions about why her daddy spent so much time sitting in the box on televised games.

Mikitas career accomplishments are among the most impressive in the history of the sport. He won the Art Ross Trophy as the NHLs leading scorer four times (1964,’65,’67,’68), the Hart Memorial Trophy for Most Valuable Player twice (1967 and’68) and the Lady Byng Trophy in’67 and’68. He remains the only player in NHL history to win the Ross, Hart and Byng trophies in the same season (1967).

Mikita suffered from chronic back ailments later in his career, and finally retired in’80 having played his entire career for the Chicago Blackhawks. He was inducted into the Hockey Hall of Fame in’83, but became known to a younger generation in a more unusual way. In the movie Waynes World, Wayne and Garth frequently hang out at a donut shop based on the Canadian Tim Hortons chain. The name of the shop is Stan Mikitas Donuts.

The Huntington Beach Bad Boy Returns To The UFC

According to the old saying time heals all wounds. In the fight game, money”or the potential of it”has the same curative effect. The latest evidence of this is the announcement that Tito Ortiz has patched things up with Dana White and agreed to a new contract to fight in the UFC. Tito left the promotion over a year ago after an acrimonious split with White, though never found a new promotional home that would give him the money and the high profile status that he craved.

Ortiz has had several run ins with the UFC over their notoriously tight pay structure, and first left the promotion in 2005. He was back later that year for a run as a coach on The Ultimate Fighter against longtime rival Ken Shamrock. After losing to current light heavyweight champion Lyoto Machida in his last UFC appearance, he left the company and bounced around in a promotional capacity. He had surgery on his back in the process, and now claims that hes back to 100%.

Tito may never regain his championship form as a fighter, but that is of minimal relevance due to one salient fact”people will pay to see him fight. Dana White evoked the same theme in his comments on Ortiz at a Friday press conference in Las Vegas:

“Tito and I have a history that everyone knows. He’s still a guy that everyone wants to see fight. He said his back has healed perfectly and he’s ready to take a shot at the title. He’s one of those guys that people love and people love to hate. We’ve put all our differences aside, have squashed everything and will move forward, and Tito will retire in the UFC.”

To which Ortiz offered this response:

“Time really cures everything. Dana was a man of his word. Dana apologized to me. We’re like boyfriend and girlfriend.”

Ortiz said that Dana White and UFC co-owner Lorenzo Fertitta came to his home in Huntington Beach, California and made him an offer he couldn’t turn down:

“I’m happy, I’m satisfied, You’ll never hear anything about money again.

While neither Ortiz nor White would speculate on a timetable for his debut or his first opponents, sources suggest that he could debut on the UFCs New Years card against Mark Coleman. Coleman is coming off a unanimous decision victory over Stephan Bonnar at UFC 100 in mid July.

To best understand Titos appeal and why the UFC was so anxious to re-sign him, well paraphrase HBO boxing commentator Larry Merchant. As he previewed the George Foreman/Michael Moorer heavyweight championship bout he addressed criticism that Foreman didnt deserve the bout based on his recent form. Merchant noted that there are many fighters, but very few stars. Like George Foreman, Tito Ortiz is a star. Some love him, some hate him but people pay to watch him fight.
